As we prepare to celebrate Thanksgiving this week, we thought it would be fun to take a deep dive into the Capon cookbook to find a “vintage” recipe in honor of the holiday. What we found is sure to be a hit on your Thanksgiving dessert table this year… Capon’s Spice Refrigerator Cookies! This simple, cinnamon spiced cookie pairs great alongside either of Capon’s pumpkin pie recipes!
1 c butter or margarine, softened
1/2 c sugar
1/2 c brown sugar
2 eggs
2 and 3/4 c sifted flour
1/2 tsp baking soda
1 tsp salt
3 tsp cinnamon
Cream together butter and sugars; beat in eggs. Sift together dry ingredients and add to creamed mixture, mixing well. Make into rolls, wrap in wax paper and place in the freezer for at least 1 hour. Slice rolls into 1/8 inch slices. Bake at 400 degrees for 6-10 minutes (depending on the diameter of your rolls) on parchment paper covered cookie sheets. The edges of the cookie will start to golden up when they are ready.
And here’s a little variation on the recipe that will result in…
Simply use the same recipe as above with these variations: Add 1 tablespoon grated orange rind to butter and sugar and substitute 1 and 1/2 teaspoons orange extract for the cinnamon.
